Happy Earth Day and welcome to Wednesday’s quoi de neuf – Earth Day Anniversary edition! Today is the 50th anniversary of Earth Day. Can you believe? Since 1970!
Wednesdays are my day to talk all about what’s up and what’s new. Things I’m reading, watching, cooking, listening too, and maybe even what I’m wearing (or wish I was wearing !).
What are you doing this Earth Day? I plan on finally doing some gardening, even though it’s still chilly. The weather is not very cooperative here in Ohio, imagine that. I will definitely fit in a nice walk with Razzi . I’ve got some other ideas, maybe you’d like to try one? Certainly Earth Day should be every day, it is our home and our responsibility to take care of it. I’m doing my best and certainly always trying to learn more.

Girl on a Bicycle on Amazon Prime, again. Nothing to do with Earth Day but a cute distraction and I had to have something about Paris on the list.

And last but not least…
Cooking:
Something green and earth friendly… and I’ve got just the thing! I’ll make a pesto with the radish and carrot top greens in the fridge and have it on toasted bread that we got from the Blue Door Bakery on Saturday – no waste here!
Radish and Carrot Green Pistachio Pesto
Ingredients
- 1 bunch radish greens
- 1 bunch carrot greens
- ⅓ cup fresh grated parmesan * or to be really earth friendly, substitute nutritional yeast
- ⅓ cup shelled pistachios
- 3 cloves garlic
- ½ cup olive oil * I really love Zoe brand
- salt, pepper
- creme de cassis * optional
Instructions
- In food processor or blender pulse the pistachios, greens, garlic, Parmesan or nutritional yeast, salt and pepper together until finely chopped. Next, while processor is still running slowly drizzle in olive oil. Scrape down sides and pulse again. Taste for seasoning and enjoy! ~When I make my regular basil pistachio pesto I add a splash of cassis – it’s my secret ingredient, it goes perfectly with pistachios and just adds a touch of sweetness. I’m sure it would work here too.~
